Delicious Corn Soup
57Mmmm Corn
My mom (the best cook ever) gave me this recipe for Corn soup. I truly love corn. I honestly think even if you don't like corn, you'll like this soup.
It's really easy and it's VERY good, so try it out and let me know what you think!
Corn Soup
1 can chicken or veggie broth,1 can creamed corn, 1 can regular corn, 2 tablespoons Olive Oil, Black Pepper, 1 scallion, Extra veggies chopped up if you want (green and/or red bell peppers, carrots)
Serves 2-3
Drain the can of regular corn and refrigerate it for an hour. After an hour, blend the regular corn with 1/2 the scallions (not too much, just a little bit - just to cut the corn up a little more).
After that, heat olive oil in a large saucepan/skillet and add the rest of the scallions. Saute until halfway cooked. Add the blended corn to the pan. Saute that for a couple minutes, then add the creamed corn to the pan (no need to put that in the fridge or blend it, just straight from the can). Add a little salt (not too much because there will be a lot in the chicken broth), and add any veggies if you want. Let that cook for a little while.
Heat up the chicken or veggie broth on the stove in a separate pot and add 1/2 a can (corn can) of milk and 1/2 can (corn can) of water. Add black pepper to the broth and heat up. Once the corn seems nice and cooked, add it to the pot with the chicken/veggie broth. Keep stirring it and cooking it together for 7-10 minutes. If there's too much water, cook longer, if there's not enough, add more. Taste it halfway through and see if it still needs salt. Add salt if needed.
Then that's it, eat! Very yummy! My approximate 'measurements' for the milk and water may be a little off, so improvise as necessary :)
